Using Word 2003 in a document that is formatted using Heading styles, Heading
style 1 is formatted as "Article 1". When trying to insert a cross-reference
to that spot it inserts the full "Article 1". Is there a way to insert just
the number without the text? I've tried tried changing the Insert reference
to the 3 various "Paragraph Number" setting but it still inserts the whole
thing.

You can add the \t switch. If you select the REF field and press Shift+F9 to
toggle the field codes of that field, you will see something like:

{ REF _Ref230093288 \r \h }

Add \t so the field code looks like this:

{ REF _Ref230093288 \r \h \t }

Shift+F9 to toogle field codes off. F9 to update the field.

\t: Causes the REF field to suppress non-delimiter or non-numerical text
when used in conjunction with the \n, \r, or \w switch.
With this switch, for example, you can reference "Section 1.01," and only
"1.01" is displayed in the result.
