At one point I found a menu somewhere that allowed me to
select which ms office xp applications (power point,
excel, word and 1 or 2 others) I wanted to have
shortcuts/icons for on my desktop? Any idea where that
menu can be found?

Right click on the current shortcut, | Properties | Change Icon
