Edit data on a merged document

It depnds on what you mean. If you merge to an output document it's a
document like any other so you can edit parts of it how you want. If it's
not that, can you try to spell it out?

I am wondering if there is any way I can actually only 'customize' on
or two merged letters manually without changing the rest of the sam
merged document?
