I am trying to create a 100 page document (approx) and want to change the
font size of the whole publication but can only seem to do 2 pages at a time
- the ones on the screen at the time. Surely I can do the whole document, it
is very time consuming otherwise?

Also I can't seem to apply the font schemes on this document. Why?

I will send other questions separately, needless to say this is driving me
MAD!!!

Because you have manually set your formatting using the formatting toolbars.

When creating your documents, you should use the formatting toolbar as
little as possible. Instead you should use styles from the Format >
Styles and Formatting Task Pane to control the formatting. That way, you
will be able to use Font Schemes to change the entire document's
formatting, and you will be able to change the font size of all text of
a particular type at once simply by modifying the style.

Sadly there is no easy way to put your document back into styles without
going through it and applying styles to each paragraph.

Yes but that raises another issue. I think I have meddled about with it so
much I have done too much damage.

I came up with another way of getting round the original problem (reducing
font size of more than 2 pages). I cut about 8 pages of text and pasted it
into a word document where I spell checked it, put caps in etc and reduced
the font size.

But when I came to pasting it back into the Publisher document only the
first two pages would fit back into their original spot. Publisher created
more text boxes right at the end of the document for the remaining 6 - even
though the original (now blank) pages were there waiting to be filled again.

Then when I tried to cut and paste the text at the end of the document back
into the pages where I wanted the text to go I couldn't even highlight the
text.

At this point I simply did not know what to do so deleted it all again.

Just another point, much of this info is going into pages with 2 columns.
When I cut and paste the text some went into 2 columns, some didn't despite
the columns being inserted.

Don't cut and paste. Do your edits if you must in Word, save the document.
In Publisher, right-click the text box, click change text, click text file,
browse to the saved Word document.
