Getting Color Separations Right

I'm sure these basic questions/problems, but I'm stuck with my limited
knowledge of color separations.

My printer called me yesterday to pick up my 24-page newsletter,
because when she prints the color separations (Pantone Blue 2757C) and
CMYK black, some things that are supposed to be blue either don't show
up or show up black, even though I thought I was careful in defining
it all the same. I tried saving my front page logo graphic in various
different formats, to no avail.

I go through and see no difference in the definitions of the blue
things that will separate and the ones that won't. I tried going into
Commercial Printing Tools===Colors==but I'm not sure what to adjust
there.

Now my black text doesn't show up when I try to preview black.

Am I correct that Publisher 2003 eliminates some of these problems?
If so, I'm out the door to get it right now.

NO! Pub 2003 color seps are buggy as heck. Especially when there is imported
EPS files with color specs. I have expereinced the same problem in the past.
The only thing I found that worked for some reason was to check the status
of each graphic in graphic manager. Once I did that the graphics printed
fine. Also check the color spec in the graphic properties to be SURE it is
actually colorized with the spot color. I haven't a clue what is up with the
text.

I did go ahead and upgrade to 2003, and that seemed to help most of my
problems, if only because the Commercial Printing Tools section under
Color is easier to understand.

Now, my next problem is this: my printer wants all graphics in EPS.
How is that going to screw things up for me?

Find another printer that knows what they are doing and is easy to get along
with.

Give the printer and PDF file and if they don't like that, find another
printer.
