I'm trying to figure out how in the Address Book portion of Entourage I can create simple groups of contacts, in a manner similar to Apple's Address Book. Y'know, like folders that would contain either a set of contacts of my own choosing (ie "Lawyers", where I manually add relevant contacts) or a smart group that would automatically update itself (ie a group for all contacts whose job title is set to "attorney"). Can someone help me please?

Try File > New > Group.

Note that Entourage does not support "smart groups", however. If you would
like MS to add that feature, let them know via Help > Send Feedback to
Microsoft in any Office App.

I'm not familiar with the way Apple does this, but you can use categories in
Entourage to accomplish the same thing.

To create subcategories, try naming all groups with a unique identifier at
the start of the name like

[GROUP] soccermoms mailing list
Group: soccermoms mailing list

Then all groups will be readily identifiable and will sort together. It's
easy to sort by Category then drag those into a group to create a mailing
list.

Each contact can have multiple categories.
