I'm not aware of any single listing of all Project fields but you can
get the information in a series of help files by searching for "fields"
in Project help.
As far as getting the field information into Excel, you should be able
to copy and paste from the help files. Another method, although perhaps
a bit tedious, is to create a series of view tables that contain each of
the fields as a column. Then use an export map to export to Excel.
