Depends what you are syncing with, but I do this with my Pocket PC using
Pocket Mirror (Google it). That allows you to keep the contacts in separate
folders on the desktop, which is very handy for organizing things, but then
syncs them to the PPC also. The contacts from the subfolder are given a
category which reflects the original folder name, and changes to them are
synced back to the correct subfolder in Outlook, so long as you don't
manually remove the special category.
Also works with task and calendar subfolders.
It's not cheap though ;(
