How do I prevent a format change from changing all entire document

In some documents, when I change the format of one line of text (e.g.,
underline) Word applies that format to the entire document. Hitting cntl-Z
clears it but in a large document it is very time-consuming and anoying.

Any suggestions?

Go to Format, Styles and deselect the Automatic Update box.
