how do I set response requested for a contact

I see that it is possible to ask for a response for an individual contact,
but haven't found out how to set it. It looks like a toolbar option, but I
was unable to set that either.

I'm not sure what you mean. A response to what?

I mean the "read response" for when someone has read a message. I only want
to set it for my son, not everyone.

No. Read receipt requests are per-message, not per-recipient.
