How do I setup a help desk schedule?

How do I setup a help desk schedule? The IT employees are assigned to work
on "regular projects" and help desk. The time spent on Help Desk issues
changes from one week to another ... How do I setup a schedule to show that
every time the employees work on help desk issues, the regular projects
schedules are impacted?

By using priorities in Resource Leveling.
A customer of mine does exactly that
