How do I turn the personalised menu off in Project?

Should be simple but can't find anywhere in the menu options, help or when
doing a search on MS site.

If you are talking about the feature where only the most used menu items
show up then it is Tools | customize | Toolbars. Then the 'Options' tab.
Check the box that says "Always show full menus"
