How to adjust scanning page size in MS document scanning

Adjust Scanning page?

I am scanning std letter sized documents using the MS Office document scanner
software. The software seems to only scan and output legal sized scans (8.5
in x 14.0 in). There must be some sort of a software switch to change to Std
letter size, so I can fax sts letter sized documents w/o looking like a total
moron ....
