If I remove Office 2003 Standard edition for Students and Teachers, and
re-install microsoft '97, do I lose all my documents?

No, but you may have problems opening them. I've not got Office 97 anymore,
but I seriously doubt whether Office 2003 files can be opened in Office 97.
Why do you wish to do this anyway? Seems a bit of a retrograde step if you
ask me...
