In Project, is there a way to calculate the # of business days between dates
(tasks)? Particularly, between two dates that are embedded within the plan
(not the start and finish dates of the project).

I'm not sure what you mean by "business days". Normally business days
are Monday through Friday and that coincides with what Project uses for
the default in the Duration field. Of course some businesses are open
Monday through Saturday or some other variation but without knowing what
you mean, it is a little hard to suggest a solution.
