Message properties (like file properties)

I would like to populate some message file properties of Outlook messages. For example, if you save an Outlook message as a *.msg file, then click on properties of the file, there are Summary properties and Custom properties that can be populated for the file. Can I populate this information within Outlook? Does this information exist within Outlook/Exchange?

For example, If I have a message that is associated with a project that I am working on, I would like to set that as a property of the message. I would like to do this with default message class items.
