You are falling into a never-ending wait and see approach. With a
popular application such as Project, there will likely be new versions
released in the future. As far as I know Microsoft has not publicly
announced a release date of the inevitable "next" version of Project.
Even so, announced release dates do not always pan out for various
reasons.
The more important question to ask yourself is, "does Project 2007, (or
even an earlier version), meet our needs"? If so, buy it and start using
it.
