No Undo!

For some strange reason in the project I'm working on the Undo has
disappeared.

E.g. when you change the hours under "work" project usually gives the little
green arrow and helper so you can keep the duration that same and just
reduce the allocated resource time. This is what I want to do. However when
I do this the little helper arrow appears for like .2 of a second and then
the screen refreshes and it's gone. After the change there is also no "undo"
available on the edit menu. Weird.

This is only on some tasks in the project. Not all.

Happens to me as well. Try "Ctrl z".

Also remember there is only one undo in project and if
you have gone past the point of no return and the action
is not reversible, it will be grayed out as well.

Nope. This happening immediately after a data entry. Enter "2" in "work" ->
No undo.
