Outlook 2007 Offline

I have Outlook 2007 setup with 2 E-mail accounts on my laptop. One is
our exchange mail server, and the other is my personal 1and1.com
account via imap/smtp. When I'm connected to the LAN everything works
fine. However, outside of this environment, I can't open Outlook at
all offline. It gives me an error message saying, "Cannot start
Microsoft Office Outlook. Cannot open the Outlook window. The set of
folders cannot be opened. The information store could not be
opened."

I understand that the exchange information store is unavailable, but I
should still be able to access my imap/smtp account using any internet
connection. Is there a way to tweak Outlook so I can still open it
offline to see this second email account?
