Outlook and multiple email addresses

We just setup an Exchange server for a client and one person is using 3
different email accounts. At the moment we are using Exchange only to store
messages, Outlook 2000 is still checking and downloading mail. The question
is how do we configure Outlook to allow the user to select his 'from'
address? Is this a feature of Outlook 2003 and should we just make the jump?

Are the 3 different email accounts all on Exchange? If not, you'll need
Outlook 2003.
