Outlook - How do I select subfolder names when sending emails

When I am preparing an email and click on 'To' I only have access to the
names in my main 'contacts' folder not the subfolders under that.
How do I make these available

Bring up the Properties dialog for each subfolder and check the Outlook
Address Book box.
