How can I generate a list of all my appointments for viewing instead of looking at them in the calendar format?

Depending on your version... I have Outlook 2000. View-Toolbars and choose
Advanced. When you've got the calendar selected, there'll be a view dropdown
on the advanced toolbar. Choose "Active appointments".

For me, File>Save as Web Page works fine.
