Picture as Backdrop not tiled

I would like to set a picture as a backdrop in one of my documents, how do I
do this without it being tiled. I just want the single picture

Assuming you're talking about Word 2003 (or something similarly recent),
choose Format - Background - Printed Watermark - Picture Watermark - etc.
