I have a custom calendar and constraint type which do not seem to be applied
when I enter new tasks. I have to select them with each new task. What am
I doing wrong?

If you want them to apply to all tasks then you need to set them as the
project calendar.
Go to the Project menu, select Project Properties, then select the project
calendar.
