replace picture with another picture (keeping formatting)

I have a document that I want to change only the pictures, and certain text.
Is there a way to replace an existing picture with an entirely new picture,
while keeping the formatting (position, size, borders, shadows, etc.) ? I
could find this for Publisher, but not Word.

Not really, no. At least, not without programming a macro to save and reapply
the settings. Although you might stand an outside chance if the graphic were
linked.
