Summarize Work and Baseline Work and store in custom field

I need to add both the Work and the Baseline Work starting at the project
start date and continuing to the Status Date, and to store the results in a
custom field. Does anyone know how to do this? I am familiar with all the
earned value fields, and I have reasons for not being able to use those to
determine the results

Depending on how you're doing costing and updating, you could try the following
formulas:

1) (ACWP / Cost) X Work = Work to the Status Date
2) (BCWS / Cost) X Baseline Work = Baseline work to the status date

Not sure what that would give you though that just Actual Work and % Work
Complete wouldn't other than the ability to move the status date around to
change the numbers.

It might be more useful to just create a Visual Report (or Excel export)
displaying cumulative timephased Work and cumulative timephased Baseline
Work. That's not quite out of the box, but it wouldn't be too hard.

Minor correction, formula #2 should be:

2) (BCWS / Baseline Cost) X Baseline Work
