Tab stops in Header

I want to put the center and right align tab stops back into the header of a
word document. I don't know how they disappeared and clicking on the
horizontal bar gets me a left align tab only. I can't believe the basic help
does not answer this.

The reason the tab stops disappeared in the first place is that they
are part of the definition of the Header style, and you probably
assigned a different style to the header of that document. First try
reapplying the Header style to it. If the tab stops still aren't
there, you may have changed the definition of that style, and you
should modify the style (in the Format > Style dialog) to put the tabs
back into it.

If you just want to bung the tab stops into that one header as direct
formatting (not recommended, but possible), there's a button to the
left of the horizontal ruler that looks like a bold L. Click that
button and watch it change to the other tab alignments.

This *is* in the help. For example, if I ask for help about "center
tab", I find one of the listed articles is about "Set tab stops". It
says the following (although I can't reproduce here the pictures of
the button that are in the help topic):

"Select the paragraph in which you want to set a tab stop... Click
Left Tab at the far left of the horizontal ruler until it changes to
the type of tab you want: Left Tab, Right Tab, Center Tab, Decimal
Tab, or Bar Tab. Click the horizontal ruler where you want to set a
tab stop."

If you have trouble with this, an alternative is to use the Format >
Tabs dialog, where you can set the alignments, locations, and leaders
(the visible characters in the tab area, such as dots or underlines).
