Tracking Changes - Deletions Hidden

After using tracking for some time, my deletions are suddenly hidden. I
looked under Tools > Options > Track Changes and the Deletions field is NOT
set to hidden, as I would have expected.

What else would cause deleted text to disappear? Tools > Track Comments is
turned on and View > Markup is set to view all of the changes.
