How do I open a document and keep the original date? The check box is not
checked. Never has been. When I open an old document, the date automatically
updates to current day.

You need to substitute a CreateDate field for the Date field. Press Alt+F9
to display the field code; change DATE or TIME to CREATEDATE, then Alt+F9
again and F9 to update. Make this change in the document template to have it
apply to new documents. The setting in the Insert | Date and Time dialog is
relevant only if you use that dialog to insert the date. If you use
Alt+Shift+D or the button on the Header and Footer toolbar, you are
inserting a field.
