I have been typing a fairly long word document with no
problem. All of a sudden when I type a "period" it
appears as a period, but when I make my next key stroke
the "period" turns into a small "carrot" symbol. I don't
know what keys I typed to create this. What do I need to
do so this doesn't happen?

Try Tools>Autocorrect Options, Autocorrect tab and uncheck "Replace text
when you type". These are those gooft emoticons or whatever. Actually, after
the symbol appears you should be able to back space over it and re-type it.
