Is it possible to create a presentation that looks like a Folder that you can
open with various documents inside that you can click on (hyperlinked) to
each document so that you can see each document?

Yes, you can. First, you will need to create a folder. Then, place all the
relevant documents that you will be hyperlinking into the folder. Now, start
PowerPoint create some folder icons, have them hyperlinked to these documents.

For the animation part, if you are referring to tree menu (Example of tree
menu: http://www.dynamicdrive.com/dynamicindex1/navigate1.htm ), you can make
use of trigger animation to do so. Check this out:
"Tutorial on Triggering Animations"

After you are done, save your presentation into the folder that contains all
the hyperlinked documents.
