change attachment options from icons to list?

When I attach a document, how do I get it off of large icon setting so it
doesn't interrupt my sentence with a large icon? I just want it in a list in
the heading part.

Use Plain Text or HTML format for the mail, not Rich Text Format

Rich-Text Format should not be used, especially when sending over the
Internet, unless you can guarantee that your recipient is also use Outlook.
RTF is to be used when sending and receiving e-mails within the same
Outlook-Exchange organization. Switch to HTML format, or better yet switch
to Plain-Text format and only use HTML format when you actually need it for
special formatting, tables, etc.
