Excel currency display

I'm new to Excel, after using Clariswork/Applework.

After setting-up a pre-formulated Ledger sheet page in Office: Mac 2008 Home edition I find that everytime I open the file the numbers are all Dollar signed and no matter what I try to keep the Euro as the preference, it always reverts back to the Dollar on opening!

How can you change the preference to the Euro?

Yep. Looks like it's a bug.
How can you change the preference to the Euro?

This workaround appears to work:

Create a new workbook with your preferred Ledger Sheet. Format the
columns, using the column dropdowns, the way you want. Delete any other
sheets in the workbook

Save the workbook *as a template* in your My Templates folder. By
default, that's

~:Library:Application Support:Microsoft:Office:User Templates:My
Templates

where ~ is your home directory.

Close and reopen XL. The Sheets gallery will now have your template in
the My Templates category.

If there is I've yet to find it! I found that the compromise solution is to not have any currency sign at all - by going to Format cells - Custom - and picking a number format without a currency sign.

AS far as I know if you have the cells set up for currency that's the
way it has always worked. I've been using Excel since Excel 5.0.1.a
(looked like excel95) its always been that way. you format cells for
currency and to either () for minus amounts or use red font color for
minus then when you typed a number, the number in cell would
automatically show up with the $ in front.
