How do I change the fields in outgoing mail?

When I click "New Message" in Outlook, the email template comes up with
"From, To, etc." I'd like to delete the "from" field but can't figure out
where to go. I know how to modify other items but can't figure this one out.
I have Word set up as my email editor.

Hi, Claudoo,

Go to Tools | E-mail accounts to change your account settings. When you say
you want to delete the "from" field, do you mean that you don't want people
to know who the e-mail is from, or you want to change who it says it's from?
