how to map fields for import files to outlook

how do i import an excel file into outlook so that the
outlook file has the same field names as in the excel
file? when i first create an outlook file with the field
names matching those in the excel file and then proceed
thru the file import process, when i get to the field
mapping screen i dont see the outlook field names i just
create and therefore can't map matching field names.
instead i see what appear to be standard outlook field
names like note color, priority, sensitivity.
