I am having problems inserting a 300dpi CMYK Jpeg into a word document.
It comes up as a big red X and prints as that as well.

I am not having problems with inserting a RGB Jpeg, which would be
great if it wasn't going to be professionally printed. If anyone has
any clue or answers they would be appreciated.

Word does not do CMYK.

I have seen a claim that you can insert a CMYK EPS file and it will
work, but I have never tried it.

Otherwise, you may want to consider sending the printer a PDF instead
of a DOC.
