Linking data from Project to Excel

How do I create links from individual cells (i.e. cost) in Project to cells
in Excel. I tried the copy-and-paste method. This works, but the links keep
breaking. (I wish you could just type "=" in excel and then select the cell
to link to in Project - like linking cells within excel.)

Never tried to link individual cells from one to the other, never had
the need. I have successfully linked an entire table from Project to
XL and then back again into Project. But that was in the days before
Project had calculation capabilities, don't need that any more! The
main reason I link from Project to XL now is to create graphs, like S
curves, in XL.

Maybe if you tell us what you're trying to achieve by linking
individual cells across apps, one of us can suggest a better way?

The links between applications are fragile as you have found. Changing names
of files and other things can cause them to break.
It is generally recommended to use the import or export functions or develop
code to manage the dependencies.
