When I insert an attachment it resolves to the body of my
email, normally it would go to the very bottom of the
email, now it's going to the very top of the email and
the recipient usually cant view it

Change your message format to HTML or Plain Text; it's now set to Rich Text.
To change; Tools-> Options-> tab Mail Format
