I would like to have Powerpoint hide some objects/text from the printer. Can
this be done? i.e. I would like students to have to take some of their
notes...

If the objects are things on slides, you can set them to be not visible
during printing. Check out this article from my site:

Included in the article is a download of a PPT add-in that does most of what
you need.
