Project and Office versions

I currently use Project 2007 with Office 2007.
I noticed that some tasks can be managed better with older versions of
Office.
Given I have the proper licenses, can I uninstall Office 2007 and replace it
with and earlier version (which ones?)?

Direi di si. Io uso Project 2003.

Yes. With any of Microsoft's programs you can buy the most recent version
then use it as the license for any earlier (not newer!) version.
