My recently viewed file option is grayed out and won't let me select it, anyone have any ideas why

The usual reason is that you have used TweakUI to suppress the MRU list on
the Windows Start menu.

How can I correct this problem? is there something checked in Tweak UI that needs changed

Yes, the setting that covers MRU lists. I don't have TweakUI, but I've heard
the setting referred to as the "paranoia" setting.
