How can I configure Outlook to move or copy an email to a folder
outside of my mailbox? For example, move an email in my Inbox to my
"My Documents" folder. Is there an Add-In or something?

That begs a question: why do you want to keep mail outside of the only
program that can read it? Outlook is much better suited to handling mail
than the Windows file system is.

Strictly for monitoring purposes. I was looking for a way to prove
that incoming mail was actually coming in without delay. So, I created
a test mailbox, and used a program to send an email to the test mailbox
every 5 minutes. But rather than have to constantly monitor the test
mailbox, I plan to use a script to look to see if there's a file
(auto-forwarded from email) in the folder on the hard drive. If the
folder has a file, I know mail is flowing OK. If it doesn't have a
file, I get notified by the script and check to see if there's a
problem.
