Is there any way I can scan some documents onto the
computer and be able to change them to a template so I
can work on them and write on them whenever I want so I
can print them out straight from my PC?

Once you've scanned the contents of a document and used some OCR software to
extract text etc to place into word, then it's just like creating any
template. The fact that the contents were taken from a scanned document are
largely immaterial.
