section specific formatting change applied to entire document

Since updating to 11.3.8 two weeks ago Word has been applying
formatting changes to the entire document even when I select only a
specific chunk of text. Whatever formatting change I want, Word
changes the font to whatever the font and formatting is for the first
line.

For example, if my first line is Arial Bold 14 pt double spaced but
the rest of the doc is Times New Roman 12 pt single spaced and I
select several sentences to put into bullets, the entire document will
change to Arial Bold 14 pt double spaced and paragraph is bulleted,
but if I click Command+Z I get my bullets in the place I wanted and
the text goes back to the way it was before I applied the bullets. If
I click Command+Z twice, I get my text back to the point before I
applied the bullets.

This doesn't happen to every document but to most of them.

In addition, my normal template now has blue as the default font
color. If Word changes my entire document, it also changes the text
back to this blue font color. (I'll figure out how to change the
default color this weekend when I have more time to read about
changing the normal template.)

Any suggestions on what to do to stop this insanity? I do a lot of
formatting and the pressing Command+Z all the time is getting old.

Not as comon on the Mac as on the PC, but the following link will give you

I guess it tells her to uncheck the "automatically update" feature
(whatever the exact wording is) in styles.

Yahooooooooo!
It worked. I was also able to change the default font color back to
black in the same window. What a simple solution. Thanks for the
answer.
