If you mean the formatting (location, font, etc.), that's in the Envelope
Address style of the Normal.dot template. See
http://www.gmayor.com/changing_envelope_layout.htm.

If you have several different layouts to store, make a separate template for
each one and then use File > New to create an envelope from the proper
template.

If you're asking about storing the actual addresses, that's best done with
the mail merge feature. See
http://word.mvps.org/FAQs/MailMerge/CreateADataSource.htm.
