in my junk mail header i have somehow deleted
FROM and SUBJECT
and have no way of finding how to get them back
and so then i have to open everyone of them to see who they can from,where
as normally i see they are from safelists or whoever and can delete or open

In your Junk Mail folder, click on View > Current View > Customize Current
View > Fields. You can re-add the From and Subject fields from there.

View>Arrange By>Current View>Customize Current View>Reset Current View, for
Outlook 2003. The "Arrange By" isn't there for Outlook 2007.
