Switching Account to send from in Outlook 2000

I am using Outlook 2000 to maintain several mail accounts
on our company servers. How do I switch accounts when I
want to send an email. It always seems to reply from a
default email address which I don't want to use. For
each account I want to reply from that account and not a
default account. Does anybody know how to switch
accounts to send from?
