Word should let Shift Alt D stay the same.

I think that in word when you press shift, alt, D and it enters the date it
should stay the same every time you open it. If I open a document from two
weeks ago, the date I inserted will say todays date. This can be inconvenient
at times.

That is a user setting. In Word 2003, Insert, Date and Time there is a
check box at the bottom to update automatically. Clear the check box on the
documents that your do not want the date to update automatically.

When you use Alt+Shift+D, you are inserting a DATE field, which will update
automatically. What you need is a CREATEDATE field instead. You could save a
CREATEDATE field as an AutoText entry and assign it to Alt+Shift+D. See
http://word.mvps.org/FAQs/TblsFldsFms/DateFields.htm. Alternatively, you
can, as g-n-o suggests, just type in the date.

You are inserting a DATE or TIME field rather than a CREATEDATE field. This
field should be put in the original template if possible.

In the document in question, press Alt-F9 to display field codes. Then
change the field to a CREATEDATE field, press F9 and then Alt-F9.

See http://addbalance.com/word/datefields1.htm for information on the
different kinds of datefields and how to format them.

You can create such a field, formatted the way you want, save it as
AutoText, and assign the Shift-Alt-D key combination to that AutoText entry.
The way I do it, though, is to create templates that have the date field
where I want it. Then when I create a document based on that template, the
date is automatically inserted where I want and I don't even have to
position my cursor and press Shift-Alt-D.
