Word template based files

I'm interested in automating the replacement of templates for 100s of
documents. I know how to relink to the new template, but is there an
easy way update the old text and objects from the old template w/o
having to recreate the documents from scratch?

You'll need to explain "update the old text and objects" -- but in general,
the answer is that you need to rebuild the documents.

By update, I mean change the headers, Textboxes and drop down controls,
etc.

In that case, yes, you'll need to re-create the files. Attaching a different
template will update only the styles (and that, only if you make it do so).
