Word2002 Symbol changed when document closed

When I insert a >= sign using the Symbol pull-down menu,
it shows up correctly in the document that I then save
and close. When I re-open the document, that symbol has
been changed to an = sign. This happens regardless of the
font I use.

Any advice??
